From Jeffrey Alford and Naomi Duguid, Flatbreads and Flavors

Ingredients:

  • 1 tsp. cumin seeds
  • 1 tsp. ground ginger
  • 1.25 tsp. coriander seeds
  • 1.5 tsp. black peppercorns
  • 0.25 tsp. cayenne pepper
  • 4 whole cloves
  • 6 allspice berries
  • 6 blades of soft-stick cinnamon (about 1.5 tsp. ground cinnamon)
