Green Beans Sauteed with Cured Ham
(Judías Verdes Rehogadas con Jambon)

- 1/2 small onion
- 1.5 lbs. green beans
- 2 tbs. olive oil
- 4 cloves garlic, lightly smashed and peeled
- 2 oz. Spanish mountain cured ham or prosciutto, in small cubes or thin squares
- ground pepper
- Bring pot of walted water to a boil. Add onion and green beans,
return to boil, cook uncovered at slow boil for about 20 minutes,
or until cooked as desired. Discard onion and drain green beans.
Refresh with cold water.
- In a skillet, heat oil with garlic, pressing garlic with back
of wooden spoon, until garlic is golden on both sides. Add beans
and ham, season with salt and pepper, and sauté, stirring, over
medium flame, until beans are hot.
