Cubed Liver Salad
From Paula Wolfert, Couscous and Other Good Foods from Morocco
Ingredients:
- 1 lb. thick slices of calf, lamb, or beef liver
- 1 clove garlic, crushed
- 1.5 tsp. sweet paprika
- 1 tsp. salt
- cumin
- 1/4 c. mixed chopped parsley and cilantro
- 1/2 c. lemon juice
- flour, preferably semolina flour
- vegetable oil
