Mast Va Khiar [Yogurt with Cucumber and Sultanas]

- 2 cucumbers
- 2 cups drained yogurt
- 2 scallions, finely chopped
- 1/2 c golden raisins
- 1/2 c black walnuts, chopped (optional)
- ground white pepper
- 1 tbs chopped fresh mint or 1 tsp dried mint
Peel cucumbers, split, scoop out seeds, and chop. Put in colander and sprinkle with salt. Let sit 30 minutes. Do not wash salt off.
Combine scallions, golden raisins, walnuts (if using), and mint in a bowl. Fold in yogurt, then cucumber. Stir well. Check salt, and add pepper, to taste. Cover and refrigerate for at least one hour.
